Seriously, Do I really need a bread machine to do this?!?!

It’s been a while ….
Since I could hold my head up high
and it’s been a while
Since I first saw you, my bread,

since i could stand on my own two feet again

since i could call you a “bread’
But everything I can’t remember as fucked up as it may seem
the consequences that I’ve rendered
I’ve stretched myself beyond my means…..to make you like a ‘bread’….

— for my bread making attempt….failed, again!

If you are expecting to see a super successful bread recipe, sorry I will let you down. I follow the recipe step by step, just with a tiny bitty twist. Then I got this :

Oh…Come’on!!!!!!! I am NOT making a banana cake! I want bread texture!

It was my ” whole wheat, nuts, high fiber, breakfast bread”.

I use lot of ingredients in the hope to make a successful breakfast bread.

I grind the toasted peanuts:

I use the lukewarm water for the yeast. mix the

1. whole wheat flour + corn meal

2. nuts

3. wheat bran // flax see// black sesame//barley powder.

Waited patiently till it is fat enough:

Carefully transfer it to my baking ware:

300F, 35 min. till it’s golden brown:

It was fluffy and soft. I thought there was LOTS of AIR in my bread. HOOOOORRAY!

BUT! When I cut it, I was super disappointed!

It does not look like a bread at all!!!!!!! 😦 It is just like a banana pound cake, so dense ! Damn, Do I really need a bread machine to make a ‘real bread”?????  I really question my “breadability”!!!!!!!!

Okay. I took a bite. well, you know, great ingredient never let you down even it does not look good. It was dense and fulfilling, with toasted nuts and black sesame, nature sweetness from the whole wheat flour, a bit moist, a bit crunchy.

I still have 3 bags of yeast for me to test out my breadability. Do you have any idea why I fail ?! is it because I put so much nuts in it ? any tips of bread making are extremely welcome! I just don’t want to sing that song again!

  1. Nope. I think bread machines are definitely overrated! Isn’t it so much more fun just to dive your hands into the mixing bowl and knead the dough with sweat and labor? 🙂 It makes eating the bread afterwards so much more enjoyable!

    I know dear why! You put too much of other ingredients!!! The bread flour is the key! With too many other gluten-free ingredients, it won’t rise as bread. You need to put at least 1/2 of the ingredients being bread flour and if you use only WW flour, you need to add vital gluten.
    Hope next time you success on making real bread. 🙂

  3. I don’t think looks are all that important. As long as it tastes good, that’s what really matters to most people. I’d rather it not look so good, but taste great, than it looking good but not tasting so great.

    Sorry, no tips from me. Baking scares me. Teehee.

  5. Bread is so hard to make! I’ve always dreamed of making my own bread, but it always turned out like cake. So I’ve given up and just relied on the local bakery to make my bread 😉 but enjoy your “bread”!!

Oh Tou Tou…I am sorry…I know exactly how you feel…I think that you had too much of other ingredients…the gluten in bread flour is what gives bread the nice texture…in spite of using a bread machine, I think you can very well make a good bread without it…I use the bread machine just to knead the dough…I am lazy 🙂

  7. I’m so sorry…will be of no help to you. I think your bread is fine. It’s heavy but full of wholesome goodness. I see some of those in the shops are also heavy and dense. It’s filling and delicious I’m sure. To me that’s important. Well done! Keep baking keep smiling 😀

  8. Aww, Tou Tou! That sounds so frustrating! You definitely don’t need a bread machine to make good bread. Do you have any wheat gluten? You need wheat gluten in a whole grain bread to make it more like a bread texture. You should be able to find it in the baking section of any grocery store.

    breadmaker is not that expensive. got one. you can save a lot time and it can make things easier.

  11. I had a bread machine. The same thing happened. It’s not about having a machine. It may be that your yeast is not good? Or you added too much “whole” ingredients. Try a simple white bread first. Using cornmeal, ww flour, etc weighs it down and makes it heavy.

  13. thats crazy!! its really hard to make it rise really high and fluffy like this without bread machines- you are a master! it can definitely be done even if it takes a little extra muscle.
    hmm what about baking soda and baking powder. i heard that if u take 2tsp of each and a dash of apple cider vinegar it bakes up REALLY nice!
    but this isnt a fail, dont worry, i’ll have it!! 😛 hehe

    ps. good tip on the sweet potato and yam cooking! i should put it in at 350 and bake for 1 hour and then at the end broil it a bit just cuz i still love a crispy outside. mmmmm ❤
